Ingredients:

  • Wafer basket – 1 pack
  • Eggs – 2 pcs
  • Sour cream – 200g
  • Flour – 300 g
  • Sugar – 150 g
  • Baking powder – 3 g
  • Berries – 150 g 
  • Butter – 100 g

Preparation:

  1. In a bowl, mix eggs with sugar, sour cream, pour melted but not hot butter, add sugar, flour and baking powder. Stir well. Berries wash and dry, add to the dough. Fill the baskets with dough, a little before reaching the edge. Bake for 20–25 minutes. in preheated to 180 ° C oven.
  2. For the cream: mix the egg whites with powdered sugar into a strong foam, as on meringue, so that the bowl can be turned over and the whites remain in place. Add the butter to the egg whites in small portions and beat each time until smooth. If the cream will take lumps, the oil was too cold and you need to put a bowl of cream in a container of hot water to slightly warm the bottom of the bowl and stir until smooth.
  3. Before the decoration of the cakes put the cream in the refrigerator for at least 30 min. In the cream, add a little pureed berry puree or cocoa, to give it color. Decorate the finished cupcakes with cream, using a pastry bag.
